The above photo shows one of my favorite meals I like to include in my meal plan. Shown above is Beyond steak, broccoli, rice, topped with sliced red peppers and green onions.
Meal plans are helpful for budgeting and assist those with a busy schedule. When you have a busy day, it is nice to know what you will have for dinner and even better if it is already prepared.
Monday
Breakfast
Steel cut oatmeal with bananas, all spice and grapefruit. Make steel cut oatmeal by Quaker Oats. Steel Cut oatmeal is cut along the grain to make for a nuttier tastes, which I love and I hope you will love it too. You can have orange or cranberry juice as a beverage. Orange juice is good for the immune system. According to the National Library of Medicine, cranberry juice is good for heart health. I personally love the tarte taste and it is not too sweet. Lunch
Penne pasta with tomato pasta sauce with basil and smoked paprika. I love penne pasta and I love the fact I can get a package of it for $1. I love basil too and I hope you too. Now as far as paprika, you can use regular paprika or organic. I personally like to use organic paprika because you can use very little and it gives a robust flavor. In 2023, I discovered how intense the flavor can be when you use organic seasonings. I first found this out when using organic garlic powder.
Dinner
Beyond steak and Nigerian spice rice with kale greens. For those of you that are not familiar, Beyond steak is a plant based meat, that is from the brand “Beyond”, hence Beyond steak. According to Beyond’s website, the plant based meat, which consists of Faba Bean Protein is certified organic.
Tuesday
Taco Tuesday with a kick spicy or mild makes for a great meal. Tacos not only make for a quick meal but are good for left overs.
Breakfast
Breakfast taco with eggs, jasmine rice, and sour cream. Create an egg omelette using green onions, red pepper as well as salt and pepper to taste. For your beverage, you can have refreshing lemonade. Lunch
Kale salad and black beans
By the way, I love black beans.
Dinner
Taco quiche (By the way, quiche was one of my favorite dishes as a child that my grandmother made.
Wednesday (Yay Midweek)
Boost your energy midweek with an energy powered breakfast.
Breakfast
Make an energy breakfast smoothie with protein powder.
Lunch
Cucumber sandwich (cucumbers are refreshing)
Dinner
Veggie Lasagna- This lasagna can include kale.
Thursday
Breakfast
Double omelette casserole. This is a good meatless meal option. Check out other meatless breakfast option: meatless breakfast

Cut up potatoes or stuffed potatoes
Friday
Breakfast
Blueberry pancakes – I love blueberry pancakes (blueberries on the inside and outside) garnish with small cut apples and raspberries

Garlic aoli with sweet potato cheese fries (you can use mild cheddar shredded cheese for this) and veggie burger
Dinner
Potato hash casserole with kidney and black beans as the ingredients.

Eggplant casserole – This can be made with mushrooms, eggplant, cheese and walnuts. You can use the type of cheese you desire.
