In April 2021, I became a vegetarian. For example, I not say: in three years I will be a vegetarian. I did not even say “I will eliminate this or that food.” My journey to becoming vegetarian began when seafood was my only meat jam. Those that eat seafood only as a meat are referred to as pescatarian, which is a person who does not eat any animal that lives on land.
Since going vegetarian in 2021, I have not regretted my decision. My decision has lead me to eating more vegetables, which gives me vitamins that are good for my body. These vitamins include vitamin C and vitamin A, which are found in broccoli. These vitamins include antioxidants.
My favorite vegetable to eat is spinach and has been way before I became vegetarian. According to the United States Department of Agriculture, spinach has vitamins K,D and C. It also has folate, which helps with cell growth along with beta carotene to help our bodies make vitamin A.
I would love to grown my own spinach. An article written by master gardener Lew Palka, posted on Penn State Extension education pages says spinach productive life stops in May. So if you are growing spinach you should pull the plant by June.

My go to meals are beyond steak, jasmine rice and broccoli.
Challenge
Being a vegetarian is not all that challenging.
My tips for becoming vegetarian for beginners includes the following:
- I would say take it slow and incorporate more vegetables for each meal. If you currently eat a lot of meat now, you can remove one meat for a week. For instance, if you eat primarily chicken, you can replace that chicken with legumes. Legumes are a group of beans. Speaking of beans, on Saturday, September 20, 2025, I discovered Angel hair pasta with protein. It is called “protein plus angel hair.”
2. Prepare foods using plant based recipes. If you love burgers, you could make a burger using lentils. I remember the first plant based burger recipe I made from a recipe included lentils and walnuts.
